UNT Dining Services is home to Mean Greens Café, the nation’s first 100% vegan collegiate dining hall, and Kitchen West, Texas’ first and only university dining hall certified Free From™ the Big 8 food allergens and gluten. In 2021, UNT introduced Eagle Landing, the university’s first standalone dining hall, inspired by urban food halls and featuring seven distinct restaurant concepts—all available for a single Meal Plan swipe.

Position Overview
The Retail Dining Food Court Manager is responsible for ensuring exceptional food quality, outstanding customer service, and efficient management of assigned operations within Retail Dining. The UNT Retail Dining Food Court features five or more distinct brand food concepts, including a mix of national brands, in-house formats, and signature dining experiences designed to serve a diverse campus community.
This position plays a key role in maintaining customer satisfaction and loyalty by upholding the mission and values of UNT Dining Services and our national brand partners. The manager drives operational excellence, consistency, and compliance across multiple branded concepts while supporting revenue growth and profitability through effective business practices and service innovation.
Key responsibilities include managing multi-brand daily operations, maintaining brand and safety standards, ensuring accurate reporting and inventory control, properly closing all retail operations, and securing products, equipment, and assets within Retail Dining Services areas.
Minimum Qualifications
Bachelor's degree in related field and three years of experience in food service management; or any equivalent combination of education, training, or experience.
Knowledge, Skills and Abilities
Extensive knowledge of dining, retail, and/or catering service operations. Thorough knowledge of the principles and practices of dietetics management knowledge and leadership skills related to business operations including planning, budgeting, organizing, controlling, and evaluating. Ability to analyze and solve problems, and make the necessary decisions on personnel, food preparation or food handling problems that may develop. Knowledge of cost and quality control techniques. Demonstrates good leadership skills and judgment. Skill in training, supervising, and evaluating the work of subordinates. Ability to develop and present formal and informal training and development programs. Knowledge of safety and security precautions appropriate to work performed. Superior attention to detail to ensure that high profile catering events or special events are executed to meet the departments high quality standards.
Preferred Qualifications
The preferred candidate will possess the following additional qualifications:
Experience in Retail food service operations & managing production.
Familiarity with managing branded and in-house concept.
Two years of management experience.

Job Duties
- Oversees food preparation, quality, and presentation across multiple branded and in-house dining concepts to ensure alignment with established standards, brand requirements, and the expectations of the campus community. Develops and implements strategies to enhance service quality, refine menu offerings, and improve overall guest satisfaction based on feedback and operational insights.
- Exhibits strong leadership abilities and sound judgment. Proficient in training, supervising, and assessing the performance of team members. Capable of creating and delivering both formal and informal training and development programs. Knowledgeable in food safety practices related to the tasks at hand.
- Monitors product inventory and coordinates with vendors to ensure timely ordering and delivery; manages portioning, waste control, and food cost tracking to support financial goals; and oversees daily sales reporting, product usage documentation, and end-of-day operational procedures.
- Adheres to all University policies, health codes, and safety standards, regularly reviewing practices to ensure adherence.
